Add default image and additional variables which were deleted

This update includes:
Adding the default image configuration at the top of the file.
Including a comprehensive set of variables, including environment-specific configurations, PKR variables, and SSH keys.
Keeping the existing deploy_ood_proxy_node job unchanged.
